A famous Szechuan recipe - the name Ma Po Tofu is roughly translated as "pockmarked grandmother beancurd," named for the old woman who supposedly Mapo Tofu (Chinese: 麻婆豆腐; pinyin: Mápó dòufu) is a popular Chinese dish from the Szechuan (Sichuan) province. It is a combination of tofu (bean curd) and minced meat, usually pork, in a spicy bean-based sauce, sometimes with other ingredients such as water chestnuts, onions or wood ear fungus. The name means "Pocked-Face Lady's Tofu," and is said to come from a (possibly fictional) food vendor by the name of Ma, who made and sold the dish. Another possible explanation stems from an alternate definition of 麻, meaning "numb": the Szechuan peppercorns used in the dish can slightly numb the diner's mouth.
True Mapo doufu is powerfully spicy with both conventional "heat" spiciness and the characteristic "ma-la" spiciness of Szechuan cuisine. The authentic form of the dish is increasingly easier to find outside China today, but usually in Szechuanese restaurants that do not adapt the dish for non-Szechuanese tastes.
Often the dish is adulterated, with its spiciness severely toned down to widen its appeal. This happens even in Chinese restaurants, commonly those not specialising in Szechuan cuisine.
Story of the Mapo Tofu.
Legend of the Pock-Marked Old Lady
Legend says that the pock-marked old woman (Má Pó) was a leprous widow who lived in the Chinese city of Chengdu. Due to her condition, her home was placed on the outskirts of the city. By coincidence, it was near a road where goods carriers often passed. Although the rich merchants could afford to stay within the numerous inns of the prosperous city while waiting for their goods to sell, poor farmers would stay in cheaper inns scattered along the sides of roads on the outskirts of the ancient city.
It is said that the first people who tasted the old woman's cooking were a farmer and his son who arrived late to the city during a terrible rainstorm. They were forced to find shelter in the old woman's home having found that all of the inns were full.
Eager for the company, the old woman from her paltry larder prepared them a meal, including the dish now know as Mapo Doufu. The dish was so delicious that soon each time the father and son passed the old woman's home they would stay for a meal. In this way, the old woman's renown spread as other goods carriers joined the father and son in visiting and staying at her home. These visitors would often bring the ingredients for her dish so as not to burden her larder.
As time passed, the dish evolved. However, the core ingredients have always been: an ounce of ground pork, a few ounces of tofu, and an ample amount of ground Sichuan pepper.

ChocolaTas

Today, Leona and I went to check out ChocolaTas. ChocolaTas is a Belgian Chocolate store in Abbotsford. I forget to bring my camera with me. Well, maybe next time, I will take some photo from the store.
Maître Chocolatier Wim Tas immigrated to Canada in 2002, with “the true spirit of Belgian chocolate” as his luggage.
Trained at Belgium's most respected chocolate house, 'Maison Wittamer', exclusive supplier to Belgian royalty, Wim Tas has created a most unique collection of confections.
Inspired by the flavours of the world, ChocolaTas showcases its unique collection of tea-based ganache fillings: Earl Grey, Rooibos, Kyoto Cherry Rose and Green Tea, as well as delicacies based on Tuscan hazelnuts, Iranian pistachios, Provençal orange peel, and Champagne from… where else? France.
A ChocolaTas chocolate is meticulously made by hand, with only the freshest natural ingredients. No artificial colours, no preservatives and no excess sugar. That's what makes them the best in BC. Wim Tas describes each piece as a "little jewel", and it is his love for the product and his dedication to excellence in his field that makes his work "art".

10 New Uses for Coffee Filters
About 100 years ago, a German housewife named Melitta Bentz punctured the bottom of a brass pot, lined it with blotting paper, and — voilà! — made the first coffee filter. Almost a century later, a perfected version of Bentz’s design is still used. “Coffee filters aren’t as likely to crumple or dissolve in water as typical paper because they have better ‘wet strength,’ thanks to longer fibers,” says Melinda McDonald, communications manager for Bunn, a beverage-equipment manufacturer. “Additionally, the fluted sides and cupcake shape allow substances to flow through the filter freely and prevent grains from flowing over the sides.”
Use Coffee Filters to:
1. Diffuse the flash on a camera. When you’re taking a close-up, soften the brightness by placing a coffee filter over the flash.
2. Strain wine from a bottle with a broken cork. Place the filter over a pitcher or a carafe and slowly pour the wine into it.
3. Serve popcorn or other snacks. The filters act as disposable bowls, so there’s no dishwashing.
4. Make yogurt dip. Use a rubber band to secure a paper coffee filter over the mouth of a deep cup or jar. Slowly pour 8 ounces of plain yogurt onto the filter. Let drain for one hour. In a bowl, mix the thickened yogurt with 1 small minced garlic clove, 1 tablespoon chopped fresh parsley, and salt and pepper to taste. Serve with crackers.
5. Heat up leftovers in the microwave. Use a filter as the protective covering over a bowl or a plate.
6. Prevent soil from draining out of flowerpots. When repotting, place a filter at the bottom, over the drainage hole, then add the soil.
7. Prevent scuffs and scratches on fine china. Use flattened coffee filters as spacers when you stack your dishes.
8. Protect hands from Popsicle drippage. Slide the wooden stick of an ice pop through a coffee filter so your hands stay mess-free.
9. Serve pita sandwiches. A circular filter is the perfect size for carrying a sandwich on the go.
10. Clean windows and glass when you’re out of paper towels. Coffee filters leave no lint or other residue.

Mover's party

Today, we were invited to go to Ryan and Sophia's mover's party. Sophia is very close friend (sister) of mine. We hang out a lot. We spend lots fun time together, learning how to grow in the marriage and praying for our husbands. I am very thanksful for a good friend like Sophia. I remember, Ryan and Sophia never want to live in a condo. Before they come to see the Season condo project, they told me they won't want to live in a condo. But at same time I really wish they could own something. The rent they pay at that time, couple hundred more, they can own something. So they came to see the Season project, we throw the idea of owning a condo on them. ( I love Condo so much, because I live in the condo alone for 6 years in San Francisco, feels like I have little piece of my own world in a huge big city) And the day we show Ryan and Sophia the condo, they decide to own one. I know this is just first step for them. God will bring them higher, in a place that they never dream of. I know they really wish one day they can own a house. And I believe God will take them to that place very soon. Wait and you will see!!Click here for more photos
